Exhibit Hall - 10 a.m. to 2 p.m.
Sampling of gluten-free foods. Many vendors will offer vegan, casein-free, and dairy-free products in addition to gluten-free wares.
9-10 a.m. - Dr. Cynthia Rudert M.D., F.A.C.P., a Board Certified Gastroenterologist specializing in the diagnosis and treatment of Celiac Disease, is serving as the key note speaker for this year’s expo. Dr. Rudert’s lecture will cover both Celiac Disease and Gluten Sensitivity.
10-11 a.m. - Gigi Stewart of Gluten Free Gigi - will prepare Raw Nut Free Fudge (free from nuts, peanuts, corn, dairy, soy, gluten, egg, casein, grains) and Raw Avocado Mayo (free from nuts, peanuts, corn, dairy, soy, gluten, egg, casein, grains)
11-12 p.m. - Roben Ryberg - author of Gluten-Free in Five Minutes will show you how easy it is to prepare gluten-free breads, cakes, rolls, sauces, sides and more in a microwave in five minutes or less with only a handful of ingredients.
12-1 p.m. - Julie and Charles Mayfield - authors of Paleo Comfort Foods Homestyle Cooking for a Gluten-Free Kitchen will discuss the paleo diet. They will talk about their backgrounds, their definition of paleo, how paleo has worked in their lives, and how they have adapted recipes to fit their lifestyle. They will show you that with a little planning and preparation anyone can make this way of eating work in their lives. They will also be offering samples of their Morning Glory Muffins, Biscuits and cooking up Sausage Gravy to serve over the biscuits.
1-2 p.m. - Rhonda Peters - author of So What Can I Eat Now?! will conduct a dairy, soy, and egg-free demo highlighting some of her favorite healthy recipes that are also low in fat, calories, sugar and sodium.
